Grain-Free Banana Bread

Grain-Free Banana Bread

You can make this banana bread as smaller loaves or as muffins (silicone muffin liners work extremely well) and wrap them individually to give as gifts. Just adjust the cooking time depending on the pan size.

Chopped nuts make this grain-free bread even more delicious, and we’re sure berries or chocolate would make nice additions as well.

  • 2 tablespoons coconut oil, plus more for greasing the pan
  • 4 large eggs
  • 3 tablespoons raw honey
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon apple cider vinegar
  • 1/2 cup coconut flour (sifted)
  • 1/4 cup almond flour (sifted)
  • 1 tsp baking soda
  • 1/2 teaspoon sea salt
  • 1/2 cup coconut milk
  • 3 large ripe bananas
  • Optional add-ins: 1/2 cup 85% dark chocolate (chopped into small pieces), chopped walnuts, cranberries, or raisins

  1. Preheat oven to 350 F
  2. Grease the sides and bottom of a loaf pan and place a piece of parchment paper on the bottom
  3. Mix the coconut oil, eggs, honey, vanilla, and vinegar with a mixer on high for 30 seconds
  4. Combine the coconut flour, almond flour, baking soda, and sea salt in a bowl
  5. Add the wet ingredients to the dry mixture, beat on high until well combined
  6. Mash the bananas, add coconut milk, mix well to combine
  7. Add the banana mixture to the batter and beat on medium until well mixed
  8. Add optional mix-ins
  9. Pour the batter into the prepared pan
  10. Bake for 40 - 45 minutes or until a toothpick inserted into the center comes out clean
  11. Allow to cool in pan for 15 minutes, remove from pan and cool on a wire rack
