Vanilla Coconut Macaroons

These are mouth watering. We really like the healthy fats from all the coconut, and the vanilla and maple syrup add tons of flavor.


  • 1 (heaping) cup of shredded unsweetened coconut flakes
  • 1/4 cup coconut oil (chilled/hardened)
  • 6 tablespoons almond flour
  • 2 tablespoons maple syrup
  • 1/2 teaspoon vanilla extract


  1. Put the coconut flakes in a food processor and process for a few bursts to shred them further
  2. Add the remaining ingredients and process until completely mixed
  3. Working quickly (coconut oil melts fast), make little balls (about one tablespoon worth each) and arrange them on parchment paper
  4. Allow them to set in the refrigerator or freezer
  5. Cover if you will not be enjoying them within the next hour

Macaroons are a wonderful small treat. They are best enjoyed cold since they soften significantly at room temperature.
